ever heard of the rally team of nuns? "Suore Serve di Maria Santissima Addolorata Squadra Corse" is the letting on this NSU Prinz, but I can't find anything online about nuns rally racing. I'm thinking that the lettering is a bit of humor of the cars owner

This could refer to a tv show and book written by Jonathan Routh, "The Nuns Go Car Racing" tv show in 1972, https://www.imdb.com/title/tt12241186/  book in 1973, but that was in the brass era

The nuns decided to take part in a car race from Paris to Rome. 
On their way through France they pass several scenes reminiscent of French paintings. In particular they are struck by an unusual picnic: "the nuns decide that the most interesting thing about the picnic is that the picnicking lady is not wearing any clothes,"
They also have trouble with some Mongolian Strongmen who are also taking part in the race.

I'll guess this focus on nuns was after the success of the 1967 tv show Flying Nun with Sally Field, based on the 1965 book The 15th Pelican
