It looks like this is a 2 seater, and the co-pilot is holding the camera. If you watch straight ahead, you can see the pilot's head moving. I thought the same thing when I panned down and saw the stick moving by itself. I think the rest of the planes are single seaters. If you pan around, you can sometimes see camera 4 reflecting in the copilot's visor and camera 2 reflecting straight up in the canopy. I read that they use 5 or 6 GoPros with the images stitched together. A comment on another video said this affects the resolution, so you have to go up to 1440 or higher to see it in HD.
